Wild Mushroom Galette 

This easy blend of a pizza and pie in one is so decadent and delicious. Rustic and elegant at the same time.

First, you want to gather all of your ingredients and supplies. I used a basic store bought ready made pie dough to make this even easier! Parchment paper is a must with baking this recipe, don't try it without it. (I did and learned my lesson)

Set out your pie dough to come to room temp while cooking your filling.

In a large saute pan, add 1 Tablespoon olive oil and heat over medium heat. Once hot, add your mushrooms and cook until just beginning to brown, stirring occasionally. Sprinkle with a little salt and pepper at this point. Add the butter, sliced onions and thyme and continue to cook until onions start to become translucent. Deglaze the pan with the red wine and cook down until wine is reduced, scraping up any yummy brown bits that formed. Remove from pan and let cool.

After mushroom blend has cooled, prepare your egg wash (whisk together egg and milk) and begin assembling your Galette. In a bowl, combine the mushroom blend with the blue cheese crumbles.

Place parchment paper on a baking sheets. Lay pie crusts flat. Spread 1/2 your mixture in the center of the the dough, leaving clear a 1.5" boarder. Fold the dough edges over to create the crust. Repeat with the second crust. Add your roasted garlic over the top, brush the edges with the egg wash and bake for approximately 40 minutes at 400° (until golden brown).

Remove from oven and enjoy immediately or serve room temperature.

Sprinkle with additional fresh thyme for garnish.

Great for parties!

This recipe makes 2 pies.

●Add sliced tomatoes like I did to add sweetness and flair.

●Add fresh asparagus spears for a crunch and pop of color.

Ingredients:

1 package of prepared pie dough

parchment paper! 😁

1 Tablespoon olive oil

1 Tablespoon butter

1/4 cup red wine (cabernet sauvignon)

16 oz. Sliced mushrooms (bellas, white, shitake, oyster) (choose what you like)

1/2 large sweet onion julienned

1 bulb roasted garlic

1 teaspoon chopped fresh thyme

8 oz. Blue cheese crumbles

1 egg

1 Tablespoon milk

Salt & pepper
